Anyone who has ever taken a trip around the island of Rhodes has perhaps noticed colourful boxes in certain parts of the countryside, especially on forested slopes or in close proximity to flowering herbs and plants. These are Beehives of course. Many of the sweets in Greece are based on the use of honey which is one of the main ingredients used in Greek confectionery. Honey cakes, dough fritters drizzled with honey, cheese pies laced with honey, honey-sesame confections, fruits and nuts preserved in honey. These are just a few of the traditional sweets you will find here in Rhodes.

Honey is the oldest Greek sweetener, and some of the best Greek honey is produced in Rhodes, due to its hot climate with lots of sunshine. For example the relentless sunshine, provides a whole, yearly calendar of flowering wild plants, more than 400 in all, in fact, the perfect workplace for the busy bees.
